Production Area, Altimetry and Soils: The grapes come from a single vineyard located on the northern slope of Etna, in the municipality of Castiglione di Sicilia, at 500 meters above sea level. This area is characterized by its proximity to the Alcantara River and soils composed of volcanic sand and ash, enriched by small percentages of calcareous clay (10%), which gives more structure to the wine and makes the tannins smoother.
Cultivation of the Vineyard: The vines, planted in 1970, are trained by the counter-espalier system with the spurred cordon system.
Breeding System: Etnean sapling
Vinification: Grapes are harvested in the early morning hours and transported to the winery in small 10 kg crates. After destemming, fermentation takes place in steel tanks. During the 10/12-day maceration, daily cap breaks are made by fulling. After racking, malolactic fermentation takes place spontaneously.
Aging: The wine evolves for 12 months partly in 700-liter French oak tonneaux and partly in 20-hl oak vats. It then ages in concrete for an additional 6 months and another six months in bottle before release.
