• Territory and Grapevine: On the slopes of the Madonie Mountains at an altitude of 700-900 m above sea level, this sparkling wine is made from the Catarratto grape.
• Breeding and Pruning: Plantings follow espalier and sapling training, while pruning is both spur and guyot.
• Age of Vineyards and Soil: The vineyards are between 30 and 40 years old. The soil is sandy, loamy, medium-textured, with an alkaline reaction due to the presence of active limestone.
• Harvest and Vinification: The harvest takes place in October. Winemaking is carried out in white, with temperature-controlled fermentation.
• Malolactic Fermentation and Re-fermentation: Malolactic fermentation is not carried out. Refermentation takes place in an autoclave.
• Type and Alcohol Content: This sparkling wine falls within the DOC Valledolmo – Contea di Sclafani – Sicily type, with an alcohol content of 12.5% vol.
