Produced on the heights of the Madonie Mountains, between 700 and 900 meters above sea level, this sparkling wine is a refined interpretation of the Sicilian Catarratto grape variety. Grown on sandy, clay soils rich in active limestone, the 30- to 40-year-old vineyard gives the wine a unique character with freshness and minerality. Manual harvesting in October precedes a white vinification with temperature-controlled fermentation, while refermentation in an autoclave gives a fine and persistent effervescence. This DOC Valledolmo – Contea di Sclafani sparkling wine surprises for its freshness and versatility, with an alcohol content of 12.5% vol.
