To make Corallo Sablé, a small amount of cocoa butter is added to the ground cocoa, after which, when cold, cane sugar (refined) in crystals is added. Corallo is the only one in the world to produce cocoa with 40 years of real experience on the ground. The plants are the descendants of the first ones that arrived in Africa, in Príncipe around 1819. In the plantation all the works are followed with the utmost care in order to produce the best cocoa possible. Each stage of the production process is scrupulously controlled. In this way Claudio Corallo transforms his cocoa beans into the purest form of chocolate. In its chocolate we find fresh, pure and intense, the scent of freshly harvested cocoa.

Claudio Corallo is the only one in the world who grows cocoa and produces chocolate in the same place, on the islands of São Tomé and Principe, in the Gulf of Guinea to the west of the African continent. The islands were discovered in 1470 by the Portuguese and cocoa was planted there. Claudio discovers his plantation, Terreiro Velho, in 1997 together with his wife Bettina. It is an abandoned plantation of cocoa plants of the same strain as those imported in 1819 by the Portuguese and incredibly selected by the monkeys, who usually choose the ripest capsules to empty them of the best seeds, suck the mucilage that covers them and then spit them out. land where they sprout and give life to new plants.
