Pressing: Grapes harvested by hand in small boxes in the early morning hours; destemmed, cooled and softly crushed

Alcoholic Fermentation: About 20 days at 15°C in steel tanks

Refinement:

• 10 months in steel on fine lees at 10-12°C
• Bottle aging: At least 4 months at constant temperature (18°C)
